Cilantro Lime Chicken Skewers (Easy High-Protein Grilling Recipe)

Hi, I’m Hannah! Welcome back to my kitchen. If you’ve been following along with me over on my About page, you know that my entire food philosophy is built around making healthy eating feel like a joy, not a chore. And honestly, there is no season that makes healthy eating easier or more joyful than summer. When the weather gets warm and the evenings stretch out long and golden, the last thing any of us wants to do is spend an hour hovering over a hot stove. That’s exactly why I am so incredibly excited to share these Cilantro Lime Chicken Skewers with you today. Paired with a brilliantly vibrant, sweet-and-spicy mango salsa, this recipe is everything summer food should be: fresh, colorful, effortless, and absolutely bursting with flavor.

There’s just something inherently fun about eating food off a stick, isn’t there? Whether you’re hosting a backyard barbecue, looking for a quick weeknight dinner, or trying to convince picky eaters to try something new, these cilantro lime chicken skewers are guaranteed to be a massive hit. The marinade comes together in minutes, relying on the magical combination of zesty citrus, earthy garlic, and vibrant fresh herbs to tenderize the chicken and infuse it with incredible taste. When those skewers hit the hot grill, the edges caramelize beautifully, giving you those irresistible slightly charred, crispy bits while the inside remains perfectly juicy.

But what truly elevates this dish from a simple grilled protein to a restaurant-quality meal is the fresh mango salsa served right over the top. The cooling, tropical sweetness of the mango combined with the sharp bite of red onion and the subtle kick of jalapeño creates a flavor profile that balances the savory, garlicky chicken flawlessly. It’s light, it’s high-protein, it’s naturally gluten-free and dairy-free, and it proves once again that eating wholesome, real food doesn’t mean sacrificing an ounce of deliciousness.

Why You’ll Love These Cilantro Lime Chicken Skewers

This recipe quickly became a weekly staple in my house, and I am confident it will become one in yours, too. Here is why you are going to be completely obsessed:

  • Quick & Easy Prep: The marinade and the salsa can both be pulled together in under 15 minutes. Once the chicken marinates, grilling takes less than 15 minutes, making this incredibly fast to execute.
  • A Perfect Sweet & Savory Balance: The savory, garlicky, citrus-infused chicken pairs wonderfully with the juicy, sweet, and slightly spicy mango salsa. It’s a literal explosion of summer flavors in every single bite.
  • Incredible Nutritional Profile: Chicken breasts are a fantastic source of lean protein, while the mango and lime pack this dish with immune-boosting vitamin C. It’s naturally low in carbs, gluten-free, and dairy-free!
  • The Ultimate Meal-Prep Star: These skewers are fantastic cooked fresh, but the chicken is just as delicious cold the next day on top of a salad or tucked into a wrap, making your healthy lunch prep a total breeze.

Key Ingredients for Cilantro Lime Chicken Skewers & The “Why” Behind Them

I always say that a recipe is only as good as its ingredients, and because we are using so few here, each one serves a very specific, crucial purpose. Let’s break down what you need and why it matters:

  • Boneless, Skinless Chicken Breasts: This is our lean protein base. Cutting the chicken into uniform chunks ensures even cooking on the grill and helps every single piece absorb maximum flavor from the marinade.
  • Fresh Lime Juice & Zest: The acid in the lime juice is the secret to tenderizing the meat, breaking down the proteins just enough so the chicken stays incredibly juicy. The zest adds pure, concentrated citrus flavor without adding extra liquid.
  • Fresh Cilantro: Used in both the marinade and the salsa! Cilantro provides a bright, earthy, slightly peppery flavor that screams fresh summer cooking.
  • Olive Oil: A healthy fat that helps carry the fat-soluble flavors (like the garlic and spices) into the meat. It also prevents the chicken from sticking to the grill grates.
  • Fresh Garlic: Minced fresh garlic gives the marinade a deep, savory pungency that contrasts perfectly with the bright lime juice.
  • Ripe Mangos: The star of our salsa! Mangos bring natural sweetness and are incredibly nutritious, loaded with vitamin C and immune-boosting antioxidants. You want them ripe but still slightly firm so they hold their shape when diced.
  • Jalapeño: Adds just the right amount of background heat to the salsa to balance the sweetness of the mango. Remove the seeds and membranes if you prefer a milder salsa!
  • Red Onion: Provides a necessary sharp, crisp bite to the salsa, adding beautiful color and a textural crunch that complements the soft mango and tender chicken.

Substitutions & Variations

We all have different preferences and pantry situations, so here are a few easy ways to customize these cilantro lime chicken skewers to make them work perfectly for you:

  • Swap the Protein: Not a fan of chicken breast? This marinade works beautifully with boneless skinless chicken thighs, which are incredibly flavorful and forgiving on the grill. It’s also fantastic on shrimp—just reduce the marinating time to 15 minutes!
  • Change Up the Fruit Salsa: If you can’t find good mangos, fresh pineapple or even peaches make an absolutely stunning substitute in the salsa recipe.
  • No Grill? No Problem: If you don’t have an outdoor grill, you can easily cook these skewers on a cast-iron grill pan on the stovetop, or bake them in the oven at 400°F (200°C) for about 15-18 minutes.
  • Make it Spicier: If you love heat, leave the seeds in your jalapeño, or add a half-teaspoon of crushed red pepper flakes directly into the chicken marinade.

Expert Tips for Perfect Cilantro Lime Chicken Skewers

Grilling chicken can sometimes be tricky (nobody wants dry, rubbery meat!), but if you follow these simple expert tips, your skewers will turn out perfectly juicy and flavorful every single time:

  • Don’t Skip the Soak: If you are using wooden skewers, you absolutely must soak them in water for at least 30 minutes before threading the chicken. This prevents the wood from catching fire and burning to a crisp on the hot grill.
  • Mind Your Marinating Time: Because lime juice is highly acidic, it will actually start to “cook” the chicken if left too long, resulting in a mushy texture. Marinate for at least 30 minutes, but do not exceed 2 hours!
  • Cut Even Pieces: Take an extra minute to chop your chicken breasts into uniform, 1-inch to 1.5-inch cubes. If you have some massive pieces and some tiny pieces on the same skewer, the small ones will dry out before the large ones are cooked through.

How to Store & Reheat

Whether you have leftovers from dinner or you’re making a batch specifically for meal prep, these skewers hold up beautifully in the fridge.

  • Fridge Storage: Remove the chicken from the skewers and store in an airtight container in the refrigerator for up to 4 days. Store the mango salsa in a separate container so it stays fresh and doesn’t make the chicken soggy.
  • Freezer Storage: You can freeze the cooked chicken (off the skewers) for up to 2 months. I do not recommend freezing the mango salsa, as the texture of the fresh fruit will become very mushy once thawed.
  • Reheating Instructions: To keep the chicken juicy, reheat it gently in the microwave on 50% power in 30-second intervals until just warmed through. Alternatively, warm it in a skillet over medium-low heat with a tiny splash of chicken broth or water.

What to Serve With Cilantro Lime Chicken Skewers

While the skewers and salsa are amazing on their own, turning them into a full, satisfying feast is easy! Here are some of my favorite healthy sides to serve alongside them:

  • Coconut Rice: Fluffy jasmine or basmati rice cooked with a little light coconut milk makes the perfect creamy, tropical bed for the chicken and salsa.
  • Cauliflower Rice: If you’re keeping things low-carb or paleo, a quick sautéed cilantro-lime cauliflower rice is phenomenal here.
  • Black Bean and Corn Salad: Keep the summer vibes going with a refreshing side salad packed with fiber and extra plant protein.
  • Warm Corn Tortillas: Pull the chicken off the skewers, pile it into warm tortillas, and top with the mango salsa for instant, amazing summer tacos!

Cilantro Lime Chicken Skewers with Mango Salsa

Prep Time 20 minutes
Cook Time 15 minutes
Total Time 35 minutes
Servings: 4 servings

Ingredients

For the Chicken & Marinade
  • 1.5 lbs boneless skinless chicken breasts cut into 1-inch cubes
  • 3 tbsp olive oil
  • 1/4 cup fresh lime juice plus 1 tsp lime zest
  • 1/4 cup fresh cilantro finely chopped
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
For the Mango Salsa
  • 2 large mangos peeled and diced
  • 1/4 cup red onion finely diced
  • 1 medium jalapeño seeded and finely diced
  • 1/4 cup fresh cilantro chopped
  • 1 tbsp fresh lime juice
  • 1/4 tsp kosher salt

Method

Prep & Marinate
  1. If using wooden skewers, submerge them in water to soak for at least 30 minutes before grilling.
  2. In a medium bowl, whisk together the olive oil, lime juice, lime zest, chopped cilantro, minced garlic, cumin, salt, and pepper.
  3. Place the cubed chicken breast into a large ziplock bag or bowl. Pour the marinade over the chicken, toss to coat completely, and refrigerate for at least 30 minutes (but no longer than 2 hours).
Make the Salsa & Grill
  1. While the chicken marinates, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Toss well and set aside in the fridge so the flavors can meld.
  2. Preheat your grill to medium-high heat (about 400°F). Thread the marinated chicken cubes onto your soaked skewers, leaving a little space between each piece.
  3. Lightly oil the grill grates. Grill the skewers for 5-6 minutes per side, turning once, until the chicken is golden brown, slightly charred on the edges, and cooked through (internal temp of 165°F).
  4. Transfer the skewers to a platter and generously spoon the fresh mango salsa over the top. Serve warm and enjoy!

Notes

• Wood skewers must be soaked to prevent burning. Metal skewers can be used immediately without soaking.
• Do not over-marinate! The lime juice will break down the chicken too much if left for more than 2 hours.
• Make it ahead: The mango salsa can be made up to 24 hours in advance and kept tightly sealed in the fridge.
