Ingredients
  

  • 2 lbs sweet potatoes about 3 medium, scrubbed clean
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tbsp fresh parsley chopped

  • Large Baking Sheet
  • Large Mixing Bowl
  • Sharp Knife or Mandoline

Method
 

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Slice Potatoes: Slice the sweet potatoes into uniform 1/4-inch thick rounds.
  3. Season: In a large bowl, combine the sweet potato rounds, olive oil, dried rosemary, dried thyme, salt, and pepper. Toss well until all the rounds are evenly coated.
  4. Arrange and Roast: Spread the seasoned sweet potato rounds in a single layer on the prepared baking sheet. Do not let them overlap.
  5. Bake: Roast for 20-25 minutes, flipping them halfway through, until they are tender and beautifully caramelized at the edges.
  6. Garnish and Serve: Immediately transfer the hot roasted rounds to a serving platter. Sprinkle generously with the crumbled feta cheese and fresh chopped parsley. Serve warm.
