Easy Sheet Pan Chicken Fajitas Recipe

Ingredients
  

  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika sweet or smoked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1.5 lbs boneless skinless chicken breasts, sliced into 1/2-inch strips
  • 3 bell peppers a mix of red, yellow, green, deseeded and sliced
  • 1 large red onion sliced
  • 3 tbsp olive oil
  • 1 lime cut into wedges
  • Optional for serving: fresh cilantro tortillas, avocado, Greek yogurt

Method
 

  1. Preheat & Prep: Preheat your oven to 400°F (200°C). In a small bowl, whisk together all the ingredients for the Fajita Seasoning: chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
  2. Combine on Pan: On a large, rimmed baking sheet, combine the sliced chicken, bell peppers, and red onion. Drizzle with the olive oil.
  3. Season Generously: Sprinkle the homemade fajita seasoning all over the chicken and vegetables on the pan. Use your hands or a pair of tongs to toss everything together until evenly coated.
  4. Spread & Roast: Spread the mixture into a single, even layer on the baking sheet. Make sure not to overcrowd the pan (use two pans if necessary). Roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly charred at the edges.
  5. Finish & Serve: Remove the sheet pan from the oven. Immediately squeeze the juice of half a lime (about 2 wedges) all over the hot fajita mixture. Garnish with fresh cilantro and serve hot with your favorite tortillas and toppings.
