Ingredients
  

  • 12 oz pre-cooked Italian chicken or turkey sausage sliced into 1/2-inch rounds
  • 1 large head of broccoli cut into bite-sized florets
  • 1 red bell pepper seeded and chopped into 1-inch pieces
  • 1 yellow bell pepper seeded and chopped into 1-inch pieces
  • 1 red onion chopped into 1-inch chunks
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley chopped, for garnish (optional)

Method
 

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Combine on Pan: On a large, rimmed baking sheet, add the sliced sausage, broccoli florets, chopped bell peppers, and red onion. Drizzle with olive oil.
  3. Season: Sprinkle the Italian seasoning, salt, and pepper over the ingredients on the pan.
  4. Toss: Use your hands or two large spoons to toss everything together until the sausage and vegetables are evenly coated with oil and seasonings.
  5. Arrange & Roast: Spread the mixture in a single, even layer. It is important not to overcrowd the pan. Roast for 20-25 minutes, tossing once halfway through, until the vegetables are tender and caramelized at the edges.
  6. Serve: Garnish with fresh parsley if desired and serve immediately.
