Grilled Peaches with Honey Greek Yogurt and Pistachios

Ingredients
  

For the Peaches
  • 4 medium fresh freestone peaches ripe but firm, halved and pitted
  • 1 tbsp avocado oil or melted coconut oil, for brushing
For the Topping
  • 1 cup plain Greek yogurt full fat or 2% preferred
  • 2 tbsp honey or maple syrup
  • 1/4 cup shelled pistachios roughly chopped
  • 1/2 tsp ground cinnamon

Method
 

  1. Preheat your outdoor grill or an indoor grill pan to medium-high heat. Ensure the grates are very clean to prevent sticking.
  2. Cut the peaches in half and remove the pits. Lightly brush the cut sides of the peaches with avocado oil.
  3. Place the peaches cut-side down onto the hot grill. Grill undisturbed for 4-5 minutes until deep, caramelized grill marks appear. Gently flip and grill for an additional 2-3 minutes until the fruit is tender but still holds its shape.
  4. Transfer the warm peaches to a serving platter. Dollop a generous spoonful of Greek yogurt into the center of each peach half. Drizzle with honey, sprinkle with chopped pistachios, and finish with a light dusting of ground cinnamon. Serve immediately!

Notes

• Picking the right peach: Use the squeeze test! They should yield slightly to pressure but not be mushy. Firm-ripe is the key to holding up on the grill.
• Grill temperature: If your grill is too hot, the sugars will burn before the fruit softens. Keep it at a steady medium-high.
• Make it vegan: Swap the Greek yogurt for thick coconut yogurt and use maple syrup instead of honey.
