- Preheat your outdoor grill or an indoor grill pan to medium-high heat. Ensure the grates are very clean to prevent sticking.
- Cut the peaches in half and remove the pits. Lightly brush the cut sides of the peaches with avocado oil.
- Place the peaches cut-side down onto the hot grill. Grill undisturbed for 4-5 minutes until deep, caramelized grill marks appear. Gently flip and grill for an additional 2-3 minutes until the fruit is tender but still holds its shape.
- Transfer the warm peaches to a serving platter. Dollop a generous spoonful of Greek yogurt into the center of each peach half. Drizzle with honey, sprinkle with chopped pistachios, and finish with a light dusting of ground cinnamon. Serve immediately!

• Picking the right peach: Use the squeeze test! They should yield slightly to pressure but not be mushy. Firm-ripe is the key to holding up on the grill.
