Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1.5 cups grated carrots about 2-3 large carrots
  • 1.5 cups milk of choice almond, oat, or dairy
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/2 cup chopped walnuts or pecans
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Preheat: Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  2. Whisk Dry: In a large bowl, mix the oats, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. Whisk Wet: In another bowl, whisk together the milk, eggs, maple syrup, and vanilla.
  4. Combine: Pour the wet ingredients into the dry. Stir in the grated carrots and half of the walnuts.
  5. Bake: Pour the mixture into the prepared dish and top with the remaining walnuts. Bake for 35-40 minutes until the center is set.
  6. Serve: Let cool for 10 minutes before slicing. Serve with a dollop of Greek yogurt or a drizzle of nut butter.
