Ingredients
  

  • 1 lb boneless skinless chicken breast, cubed
  • 1 tbsp olive oil or avocado oil
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 cup snap peas
  • For the Sauce:
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup chicken broth or water
  • 1 tbsp honey
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp cornstarch
  • 1 tsp toasted sesame oil

Method
 

  1. Sauce: First, in a small bowl, whisk together the soy sauce, broth, honey, garlic, ginger, and cornstarch.
  2. Chicken: Next, heat oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes until browned. Remove and set aside.
  3. Veggies: Then, add broccoli, peppers, and snap peas to the hot pan. Stir fry for 3-4 minutes until crisp-tender.
  4. Combine: Return the chicken to the pan.
  5. Finish: Pour the sauce over the mixture. Toss to coat and cook for 1-2 minutes until the sauce thickens and becomes glossy.
  6. Serve: Finally, serve hot over rice or cauliflower rice.
