Ingredients
  

  • 1 cup dark chocolate chips at least 70% cocoa
  • 1/2 cup coconut oil or grass-fed butter
  • 3 large eggs room temperature
  • 1/4 cup maple syrup
  • 1/2 cup unsweetened cocoa powder plus extra for dusting
  • Optional: 1 tsp vanilla extract and a pinch of sea salt

Method
 

  1. Preheat: Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. Melt: Melt the dark chocolate and coconut oil together until smooth. Let it cool slightly.
  3. Whisk: In a large bowl, whisk the eggs and maple syrup until well combined.
  4. Fold: Slowly pour the melted chocolate into the egg mixture while whisking constantly. Sift in the cocoa powder and salt, then gently fold until smooth.
  5. Bake: Pour into the pan and bake for 25-30 minutes until the edges are set.
  6. Cool: Allow the cake to cool completely in the pan before removing. Dust with cocoa powder and serve with fresh berries.
