Ingredients
  

For the Salad:
  • 1 lb lean ground turkey 93/7
  • 2 tbsp taco seasoning homemade or low-sodium packet
  • 1 head Romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn kernels fresh, frozen, or canned
  • 1 avocado sliced
For the Creamy Dressing:
  • 1/3 cup plain Greek yogurt
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1-2 tbsp water to thin

Method
 

  1. Cook Turkey: First, heat a non-stick skillet over medium heat. Add the turkey and cook until browned. Add taco seasoning and a splash of water. Simmer for 2 minutes. Remove from heat and let cool slightly.
  2. Make Dressing: Next, in a small bowl, whisk together the Greek yogurt, lime juice, olive oil, garlic powder, salt, and pepper. Add water one tablespoon at a time until it reaches a drizzle-able consistency.
  3. Assemble Base: Then, divide the chopped lettuce among four bowls or meal prep containers.
  4. Add Toppings: Top with the turkey, tomatoes, black beans, corn, and avocado.
  5. Serve: Finally, drizzle with the dressing immediately before eating.
