Ingredients
  

  • 1 lb ground turkey 93% lean
  • 1 large bell pepper diced
  • 1/2 yellow onion diced
  • 1 medium zucchini diced
  • 1/2 cup canned black beans rinsed and drained
  • 1/2 cup frozen or canned corn
  • 2 tbsp taco seasoning low sodium
  • 1/4 cup water
  • 1/2 cup shredded cheese optional
  • Fresh cilantro and lime for garnish

Method
 

  1. Brown Turkey: In a large skillet over medium-high heat, cook the ground turkey until fully browned. Drain any excess fat.
  2. Sauté Veggies: Add the onion and bell pepper to the skillet. Cook for 4-5 minutes until softened.
  3. Add Remaining Veggies: Stir in the zucchini, black beans, and corn.
  4. Season: Add the taco seasoning and water. Stir well to coat everything.
  5. Simmer: Reduce heat to medium-low and simmer for 3-5 minutes until the zucchini is tender.
  6. Melt Cheese: Sprinkle cheese over the top, cover for 1 minute until melted, and serve hot with fresh lime.
