Ingredients
  

  • 1 cup zucchini finely shredded and squeezed (about 1 medium zucchini)
  • 1/2 cup creamy almond butter or peanut butter
  • 1/2 cup pure maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup cocoa powder
  • 1/3 cup oat flour gluten-free if needed
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Method
 

  1. Preheat: First, preheat your oven to 350°F (175°C) and line an 8x8 baking pan with parchment paper.
  2. Prep Zucchini: Grate the zucchini. Place it in a towel and squeeze out the excess liquid. Measure 1 cup of the squeezed zucchini.
  3. Mix Wets: Next, in a large bowl, whisk together the almond butter, maple syrup, egg, and vanilla until smooth.
  4. Add Drys: Stir in the cocoa powder, oat flour, baking soda, and salt.
  5. Fold: Fold in the shredded zucchini and chocolate chips until combined.
  6. Bake: Spread the batter into the prepared pan. Bake for 25-30 minutes.
  7. Cool: Finally, let the brownies cool completely in the pan before slicing. They need time to set!
