Sparkling Cucumber Mint Limeade

Ingredients
  

Drink Base
  • 1/2 cup English cucumber diced (plus extra slices for garnish)
  • 1/4 cup fresh mint leaves loosely packed
  • 1/2 cup fresh lime juice about 3-4 large limes
  • 3-4 tbsp agave nectar or pure maple syrup adjust to desired sweetness
To Serve
  • 3 cups sparkling water chilled
  • 2 cups ice cubes

Method
 

Mixing Instructions
  1. In a large pitcher, combine the diced cucumber, fresh mint leaves, lime juice, and agave nectar. Using a muddler or the back of a wooden spoon, gently press and twist the ingredients for about 1 minute to release the cucumber juices and mint oils.
  2. Fill the pitcher with the ice cubes, giving the muddled syrup base a quick stir to begin chilling it down.
  3. Slowly pour the chilled sparkling water over the ice. Give the pitcher one gentle stir from the bottom up to mix the limeade without losing the carbonation.
  4. Pour into individual glasses. Garnish each glass with a slice of fresh cucumber, a lime wheel, and a sprig of extra mint. Serve immediately and enjoy cold!

Notes

• Make Ahead: Muddle the cucumber, mint, lime juice, and sweetener up to 2 days in advance. Store in the fridge and add ice and sparkling water right before serving.
• Low Sugar Option: Swap the agave for your favorite liquid stevia or monk fruit drops to make this a completely sugar-free refreshment.
• Smoother Texture: If you prefer a drink without fruit bits, simply pour the muddled base mixture through a fine-mesh strainer into your pitcher before adding the ice and sparkling water.
