Sparkling Hibiscus Berry Iced Tea

Ingredients
  

Tea Base
  • 4 bags hibiscus tea or 2 tablespoons loose dried hibiscus petals
  • 2 cups boiling water
  • 1 cup mixed berries fresh or frozen (strawberries, raspberries, blueberries)
  • 3 tbsp pure maple syrup adjust to desired sweetness
  • 2 tbsp fresh lemon juice about 1 medium lemon
To Serve
  • 2 cups sparkling water chilled
  • 4 sprigs fresh mint plus extra for garnish
  • 4 cups ice for serving

Method
 

Prepare the Concentrate
  1. Place the hibiscus tea bags in a heat-proof pitcher or large measuring cup. Pour the 2 cups of boiling water over them and let steep for 5 to 7 minutes. Discard the tea bags and let the liquid cool slightly.
  2. In a sturdy bowl or the bottom of your serving pitcher, combine the mixed berries, pure maple syrup, and fresh mint leaves. Use a muddler or the back of a wooden spoon to firmly crush the berries and mint, releasing their juices and oils.
  3. Pour the steeped hibiscus tea and the fresh lemon juice into the muddled berry mixture. Stir well to combine. (Optional: If you prefer a smooth drink, you can strain this mixture through a fine mesh sieve to remove the fruit pulp and mint leaves, but I love leaving them in for texture and visual appeal!).
Assemble the Drinks
  1. Allow the tea concentrate to chill in the refrigerator until cool, or at least 15-20 minutes.
  2. Fill four large glasses with ice. Pour the cooled hibiscus berry concentrate until each glass is about halfway full. Top off each glass with the chilled sparkling water. Garnish with a fresh mint sprig and an extra lemon slice, and enjoy immediately!

Notes

• Make Ahead: You can prepare the hibiscus berry concentrate up to 5 days in advance. Store it in a sealed jar in the fridge and add sparkling water right before serving.
• Sweetness Level: The tartness of hibiscus can vary. Taste your concentrate before adding the sparkling water and stir in an extra tablespoon of maple syrup if you prefer a sweeter drink.
• Ice Cube Trick: Freeze extra berries and mint leaves inside your ice cubes for a beautiful presentation that won't water down your drink!
