Prepare the Concentrate
- Place the hibiscus tea bags in a heat-proof pitcher or large measuring cup. Pour the 2 cups of boiling water over them and let steep for 5 to 7 minutes. Discard the tea bags and let the liquid cool slightly.
- In a sturdy bowl or the bottom of your serving pitcher, combine the mixed berries, pure maple syrup, and fresh mint leaves. Use a muddler or the back of a wooden spoon to firmly crush the berries and mint, releasing their juices and oils.
- Pour the steeped hibiscus tea and the fresh lemon juice into the muddled berry mixture. Stir well to combine. (Optional: If you prefer a smooth drink, you can strain this mixture through a fine mesh sieve to remove the fruit pulp and mint leaves, but I love leaving them in for texture and visual appeal!).
Assemble the Drinks
- Allow the tea concentrate to chill in the refrigerator until cool, or at least 15-20 minutes.
- Fill four large glasses with ice. Pour the cooled hibiscus berry concentrate until each glass is about halfway full. Top off each glass with the chilled sparkling water. Garnish with a fresh mint sprig and an extra lemon slice, and enjoy immediately!

• Make Ahead: You can prepare the hibiscus berry concentrate up to 5 days in advance. Store it in a sealed jar in the fridge and add sparkling water right before serving.
• Sweetness Level: The tartness of hibiscus can vary. Taste your concentrate before adding the sparkling water and stir in an extra tablespoon of maple syrup if you prefer a sweeter drink.
• Ice Cube Trick: Freeze extra berries and mint leaves inside your ice cubes for a beautiful presentation that won't water down your drink!
