Tropical Dragon Fruit Smoothie Bowl

Ingredients
  

Smoothie Base
  • 1 cup frozen pink dragon fruit (pitaya) cubed, or 1 packet (100g) frozen puree
  • 1 medium banana sliced and frozen solid
  • 1/2 cup frozen mango chunks can substitute with frozen pineapple
  • 1/3 cup coconut milk unsweetened, from a carton (plus more if needed)
  • 1 tbsp chia seeds
Toppings
  • 2 tbsp unsweetened coconut flakes toasted
  • 1/4 cup fresh blueberries or raspberries
  • 1/2 kiwi peeled and sliced
  • 1 tbsp almond butter optional, for drizzling

Method
 

Instructions
  1. Ensure your banana, mango, and dragon fruit are completely frozen solid. If using fresh fruit, chop and freeze them in a single layer on a baking sheet the night before.
  2. Add the frozen dragon fruit, frozen banana, frozen mango, chia seeds, and half of the coconut milk to a high-speed blender or food processor.
  3. Blend on low speed. If you have a tamper, use it to push the frozen fruit down toward the blades. If not, stop the blender every 15-20 seconds to scrape down the sides with a rubber spatula. Add the remaining coconut milk only 1 tablespoon at a time, strictly as needed to keep the blender moving. The mixture should be very thick!
  4. Once smooth and creamy, scoop the thick base immediately into two bowls. Top beautifully with toasted coconut flakes, fresh berries, sliced kiwi, and a drizzle of almond butter. Enjoy right away!

Notes

• For the absolute thickest bowl, strictly limit your liquid. It takes patience to stop and scrape the blender, but the ice-cream-like texture is worth it.
• If you are making this for meal prep, portion the dry/frozen ingredients into bags and keep them in the freezer. Just grab one and blend with milk when you wake up!
• Have leftover smoothie? Pour it into a popsicle mold and freeze for a refreshing, high-fiber afternoon treat.
